Shiitake Mushroom Pâté
Serves 4-6
- 2 Tblsp unsalted butter
- 2 garlic cloves, chopped
- 2 shallots, chopped
- 8 oz shiitake mushrooms, sliced
- 2 Tblsp soy sauce
- 1/4 C red wine
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 1 Tblsp sesame oil
Wine Complement: Duckhorn Vineyards Howell Mountain Napa Valley Merlot
In a medium skillet, over high heat, melt the butter. Sauté the garlic and shallots for 2 to 3 minutes. Add the mushrooms, cook until wilted, about 3 to 4 minutes. Add soy sauce and wine, reduce until mostly dry. Season to taste with salt and pepper.
Transfer to a food processor and purée until smooth. At the last minute, drizzle in sesame oil. Serve on freshly toasted crostini or toast points.
