Fabulous Fish Tacos
These are not your typical tacos. They are loaded with fresh ingredients - perfect for a light al fresco dinner.
Serves 4
- 1 pound halibut, sea bass, or cod fillets, bones removed
- 2-3 tablespoons Miguel's Mexican Fiesta Herb Rub
- 8 small corn or flour tortillas
- ¼ cup mayonnaise
- 1 red bell pepper, roasted, ribs and seeds removed, cut into strips
- 1 avocado, cut into thin slices
- ½ red onion, thinly sliced
- 2 jalapeņos, seeds and ribs removed, cut into slivers (optional)
- ¼ cup cilantro leaves
- ½ cup feta cheese (or queso fresco)
- 1 lime, quartered
Prepare the grill or broiler. Sprinkle the fish with Miguel's Mexican Fiesta Herb Rub. Grill or broil fish until opaque and flakey, about 5-8 minutes depending on the thickness of the fish. Wrap the tortillas in a couple of wet paper towels and microwave for 1-2 minutes or until hot and steamy.
To assemble, spread a little mayonnaise on each tortilla and divide the fish, roasted pepper, avocado, onion, jalapeno, and cheese among the tortillas. Sprinkle with cilantro, a squeeze of lime juice, and a pinch of salt. Fold the tortillas over and place two on each plate-you are ready for a fiesta!
