Blue Cheese-Thyme Popovers
Makes 2 dozen
- 2 large eggs
- 1 C whole milk
- 2 Tblsp unsalted butter, melted
- 1 C all purpose flour
- 1 tsp kosher salt
- 1 tsp black pepper
- 3 oz Stilton cheese, or other sharp, hard, blue veined cheese, crumbled
- 1 Tblsp fresh thyme, roughly chopped
In the bowl of an electric mixer, fitted with the whisk attachment, combine eggs, milk, melted butter, flour, salt and pepper. Whisk until all of the lumps have disappeared. Add the blue cheese and thyme, and mix until just combined. Transfer the batter to an airtight container. Refrigerate batter for at least 2 hours, or up to 1 day.
Preheat oven to 425°. Generously butter mini muffin tins. Fill each cup to the top with the chilled batter. Bake popovers until golden and puffed, about 15-18 min. Best served warm.
